45 Ravioles: A Cypriot version of the Italian ravioli, stuffed with halloumi and dried mint. Afelia: Pork chunks, fried and cooked with red wine and coriander seeds. Meze: A selection of small dishes including dips, salads, olives, fried greens with eggs, koupepia, makaronia tou fournou, halloumi, lountza, sausages, pilaf (cracked wheat with tomato sauce) and grilled meats. SWEET DISHES Loukoumades: Small, fried dough balls, drizzled with honey or syrup, sprinkled with cinnamon. Glyka tou koutaliou: Known as spoon sweets. Whole fruits or peels preserved in syrup and served on a spoon. Mahallepi: Made with corn flour, served with rose syrup or rosewater and/or rose ice cream. Bourekia: Fried or baked pastries, savoury (with grated halloumi, minced meat, cheese) or sweet (cream, anari cheese). The PDO products There are several products unique to Cyprus that are a must and two of them have a PDO (Protected Designation of Origin) certification: Halloumi: Cyprus’ most famous cheese. PDO halloumi is made from fresh sheep or goat milk, or a mix with a lesser percentage of cow milk. It is either soft and fresh or mature, with dried Cypriot mint for a subtle herbal note. Halloumi is cooked on the grill, fried, or as is, and enjoyed in salads, sandwiches (ideally in pitta bread) and in various dishes. Kolokasi Sotiras/Kolokasi-Poulles Sotiras: Kolokasi is a uniquely flavoured taro root and poulles is its smaller version. It has been cultivated in Cyprus for over 800 years and it mainly grows in the town of Sotira, in Ammochostos. It can be cooked in tomato sauce (“yahni”), as a casserole dish with vegetables and tomato sauce (“kapamas”), in red wine and coriander, or fried like chips. A souvenir! Take back home a taste of Cyprus. Charcuterie: Cold cuts such as loukanika (sausages), lountza (pork loin) and chiromeri (pork leg) cured with red wine and spices.
