In a bowl, stir the tahíni with a fork. Gradually whisk in the water and lemon juice until smooth. 2. Add the crushed garlic and continue whisking until the tahíni turns pale and creamy. 3. Mix in the olive oil, salt, and extra lemon juice to taste. 4. Sprinkle with chopped parsley and serve. Tips • Tahini dip should be thick and creamy. • It is frequently used as a sauce for souvláki or inside píta bread, but it’s also delicious as a dip with freshly baked bread.
