Πριν από πολλά χρόνια, ο βασιλιάς Ριχάρδος ο Λεοντόκαρδος ήρθε στην Κύπρο και κατέλαβε το νησί, ενώ μετά το πούλησε σε τάγμα ιπποτών, που ονομάζονταν Ναΐτες. Πέρασε καιρός και οι Ναΐτες έπρεπε να φύγουν από τις περιοχές που διοικούσαν, έτσι η Κύπρος περνούσε από τάγμα σε τάγμα, με τελευταίους ιδιοκτήτες τους ιππότες Ιωαννίτες. Οι Ιωαννίτες διοικούσαν τις τρεις κομμανταρίες της Κύπρου – της Λεμεσού, του Φοίνικος και του Τέμπλους. Στη Μεγάλη Κομνανταρία, τα αμπέλια τους φύτρωναν κάτω από τον καυτό ήλιο. Οι ιππότες μάζευαν τα σταφύλια, τα άφηναν να λιάζονται και έφτιαχναν ένα μαγικό κρασί—την κουμανταρία, το κρασί της Κύπρου. Ήταν γλυκό σαν το μέλι, δυνατό σαν φλόγα, κόκκινο σαν το αίμα των θρύλων. Ταξίδεψε σε παλάτια και αυλές βασιλιάδων, έγινε το κρασί των ιπποτών! Και σήμερα, αν σηκώσεις ένα ποτήρι κουμανταρία στο φως, ίσως δεις μέσα του τις σκιές των ιπποτών.
